Tonight, I felt like making something simple, healthy, and flavorful for my family.
Even though I cook for my career, I still love cooking for my family. I love taking classic recipes and making them simplified for a busy week. This dish is a play on the classic Bip n Bop, my favorite part is the runny egg with a touch of sesame oil with the fluffy white rice, if you have never had this combination please try it, you won't be disappointed.
I think every ingredient is pretty standard except for these two, gochujang paste which is a sweet and mildly spicy Korean condiment you can find in your regular grocery store. The other is fish sauce, don't let the name throw you off, this sauce adds the perfect amount of umami and funk to Asian dishes.
Ingredients
16 oz ribeye steak sliced thin
1 sliced or chopped yellow onion
1tbls ginger paste or fresh ginger
3 cloves of chopped garlic
2 tbls gochujang paste
1tbls of fish sauce
1/3 cup soy sauce
1/4 cup rice wine vinegar
2 tbls of sugar or sweetener
of choice
juice from 1 lime
1 tbls sesame oil plus some for the egg
Mayo
Siracha
Finishing veggies- I used thinly sliced cucumber, avocado and carrots plus fresh cilantro and green onions
Cooked white Rice
4 eggs
You need to marinade the steak first, at least for an hour but 8 hours would be better. In a bowl add the ginger, garlic, gochujang, fish sauce, soy sauce, rice wine, sugar, lime mix - add the steak
In a pan add the steak and cook until brown, the sauce should reduce and tighten up
In a separate pan add 1 tbls of butter and a few dashes of sesame oil and cook the eggs so the yolk
is still runny
I love a creamy element to this, so I top with siracha mayo which is just mayo and siracha mixed together
For plating - add 1 cup of white rice top with your beef, fried egg, veggies, and drizzle with your siracha mayo.
